Atavist is the essence of Australian Merlot. Grapes are sourced from several cool-climate sites that are selected with this wine in mind. It still has the plushness you recognize, but it’s paired with savory herb and bitter cocoa notes that elevate this red to another level. Temperatures during fermentation were kept cool to retain the fruity flavors of cherry, plum, and red berry. Oak aging brings the whole package into focus, with an artful balance of deep flavors and tannic structure evident in the glass. With medium body and round texture, this wine is fantastic with vegetables, especially hard-to-pair roasted cherry tomatoes. If you’re looking for something a little more meaty, roast duck and lean cuts of steak are also great matches.
